What bread is best for paninis?
Make it with any bread you like, sourdough, light rye, white or brown. You may even use ciabatta or Turkish rolls. Baguettes and dense bakery loaves fare well. Just ensure you toast it well. Your grill or air fryer should be nice and hot for a good toast. If you are vegan you may opt for olive oil for brushing. If not vegan, a hint of butter is fine. You can also use spreads like hummus and pesto for variations.
Veg grilled sandwich does not need heavy butter and cheese. Add a bunch of salad leaves or rocket leaves for crunch and you are all set for a boom of flavors in your mouth. I am salivating as I write!

Ingredients
- Turkish bread
- Zucchini
- Butternut pumpkin
- red pepper / red capsicum
- Salad leaves (Argula/Rocket/Spinach)
- Avocado
- Olive oil
- Salt and pepper
Instructions
- Cut 1 cm thick pumpkin, zucchini, bell pepper, avocado slices. Apply oil on pumpkin, zucchini and bell pepper using a pastry brush. Season with salt and pepper.
- Preheat air fryer at 180 C for 10 mins. Spread the pumpkin slices in the air fryer tray.
- Air fry at 180 deg C | 350 F for 8 mins. Keep it aside
- Similarly, spread the zucchini slices in the air fryer basket.
- Air fry for 5-6 mins at 180 C | 350 F. Keep it aside.
- Spread the bell pepper slices in the air fryer basket. Air fry for 5-6 mins at 180 C | 350 F. Keep it aside.
- Slice the bread/sandwich bread. Toast bread for 3-4 mins @ 200 deg C| 390 F.
- Toss some olive oil in salad leaves. Place the salad leaves between bread slices. Followed by grilled veggies. Season with salt and pepper as per taste. Serve immediately.
- Cut the sandwich across in 2 pieces before serving
Variations
You can grill any veggies like eggplant, Portobello mushrooms, courgette, artichokes, broccoli, asparagus. If you like it more flavorful, add pesto or hummus to it.
Substitution
You can use any white bread or country bread slices if you do not have Turkish bread.
Storage
- You can make this sandwich and store for few hours. Just reheat the sandwich again in the air fryer before serving.
