We all love khari biscuits. These salty puff pastry biscuits have been a part of teatime always. You get it in many varieties, masala, jeera, plain and maska or butter based. You can get them at local bakeries and also at supermarkets. However there is nothing like homemade cakes and cookies.We take home cooking a little further, make them low calorie by using an air-fryer. Super thrilled to make these air fryer khari biscuits that they were over in 1 day.
We keep a pack of these frozen sheets in the freezer and also like to make vegetables puff with the same sheets.

Kutch diaries and baking with love
We loved taking our food trails in India some years ago. One such amazing foodie vacation was in Kutch during Makar Sankranti where we ventured to see Rann of Kutch and a tiny hamlet of Mandvi. After having a good meal at Osho's we were just roaming around the streets where we stumbled upon a small bakery. There was no name on the door yet an amazing smell brought us to their steps. Just two men wearing their caps, they didn't have chef coats. Yet their food was so amazing. They went on to make amazing cookies and trays full of khari puff pastry meticulously in front of our eyes.
This sweet food memory always stayed with me. You should always give your work a 100% and you will always get satisfaction at the end of the day. So here is our air fryer khari biscuits post dedicated to those hardworking bakers who I wish to meet again some day.
Khari biscuit Ingredients
- Puff pastry sheets
- Oil for brushing.
- Salt
- black pepper

Equipment
- air fryer
- pastry brush
Instructions
Mix salt,pepper with oil in a bowl
- Thaw the puff pastry sheets for 5-10 minutes.Apply a brush of salt/pepper mix on the sheet or any spice of your choice on one of the sheets/Preheat the air fryer for 10 mins at 180 deg C.
- Place the second layer on top
- Divide the sheet into equal parts
- Twist the layer to make twisted khari or have straight ones as you wish
- Preheat the air fryer for 10 mins at 190 deg C.Cook for 9-10 mins at 190 deg C
- Once cooked, Allow to cool for some time, store in an air tight container.
Substitutions
You can use wheat flour pastry sheets to make brown khari instead of maida based puff pastry. You can also make sheets from scratch.
Variations
You can make masala khari, methi khari, brown khari, maska khari or butter khari,jeera khari as a variation to plain khari.if you like shapes you can make twisted khari biscuits too.
Storage
Store in an air tight jar.
Top tip
Always store them in air tight jar after they cool down so that they do not soften.

Hint: Generally there is enough oi/butter in them so you can make it without adding an extra layer of butter.
