Homemade noodles & tasty masala

Instant noodles is what I crave when I am sick or if I want to eat something easy and light .However my health has been prone to many allergies like egg,MSG better known as Ajinomoto. This led to me avoiding noodles and Chinese or giving special instructions when I go out to restaurants for eating Chinese.Finally this allergy resulted in cooking home made noodles and masala without flavor enhancers(621,635,637) and can be made at home.Homemade Noodles & tasty masala is all you need if you want to try it too.Also,it tastes exactly like the market one).

Kids love Instant noodles but at the back of the mind of every mom is how to avoid junk.Advertising has always been at war with moms trying to make kids eat healthy(at least till the age they would listen to mothers).This noodle recipe is a choice both the parties will love to try over a Sunday breakfast.

Ingredients
  1. For Noodles
  2. 3/4 cup whole wheat flour (aata)
  3. 1/3 cup all purpose flour (maida)
  4. 2 tbsp semolina (suji)
  5. 3 tbsp oil
For tasty masala
  1. 2 tsp onion powder
  2. 2 tsp garlic powder
  3. 1/2 tsp ginger powder
  4. 1-1/2 tsp coriander powder
  5. 2 tsp red chilly powder
  6. 1/2 tsp turmeric powder
  7. 1 tsp cumin powder
  8. 1/4 tsp fenugreek seeds/powder
  9. 1-1/2 tsp garam masala
  10. 4 tsp amchur or dried mango powder
  11. 3 tsp sugar
  12. Salt as per taste
For Homemade Noodles
  1. Dry roast the dry ingredients in a pan for 5-7 minutes.Keep it aside to cool off.
  2. Knead the dough with minimal water until it is smooth and elastic,keep it aside for atleast 15 minutes.
  3. Heat a pan with enough water (1-2 liters),add salt and 1 tbsp oil.
  4. Add this flour to the sev/noodle maker.using the sev maker allow the noodles to fall in the boiling water.Cut the noodles using a knife to break in batches.
  5. Let this batch of noodles cook for 5-6 minutes on medium flame,take out this batch and add the next batch to the boiling water
  6. Allow the noodles to cool in a plate.
For the masala
  1. Mix all the spices and store in an air tight container.
  2. You may use a spice grinder in case of using seeds.
For mix vegetables noodles
  1. Cook the choicest of vegetables in a pan, add the masala and noodles. Do not cook the noodles for a longer period of time.
  2. Garnish with butter.
Notes
  1. Use the thinnest mould of sev/noodle
