I love Mexican food. It is quite simple to make yet is a bowl full of balanced diet. It has a serving of proteins, taco or rice and guacamole and salad. Basically everything in 1 bowl to have a good yummy lunch whether you are on the go, at a picnic or just want a weekday dinner. I love the way they use beans and avocado. Either a black beans taco or Vegan black beans burrito bowl is my go-to recipe when I want to eat a meal outside.
I love eating vegan. Veggies are great, flavors are simple and filling. Plus I can cook them at home later once I know how it tastes.

Follow the below steps to make Vegan black beans burrito bowl
How to make brown rice?
- Soak brown rice for atleast 30mins.
- Boil it with thrice the water until it is soft and strain them or refer to packet instructions.
How to grill corn?
- Grill corn on a stove until its charred from all sides. Please ensure your chimney is on and windows open. We do not want to trouble Fireman Sam!
- Using a sharp heavy knife, remove the kernels (moving vertically from top to bottom).
How to make black beans curry?
- Heat oil in a pan. Add chopped onions,garlic and salt to it. Let it cook until translucent
2. Add chopped tomatoes.Cook until soft.
3. Add the curry powder
4. Add canned black beans and mix well.
5. Add 1 cup water and adjust salt accordingly. Let it come to a boil.
6. Let it simmer for few minutes, it will thicken more as it cools down.
Serve black beans with brown rice,grilled corn,avocado slices,tomatoes and pickled cabbage.
To make quick pickled cabbage - heat ½ cup water with ¼ cup vinegar, add 1 teaspoon salt and 1 tbsp. sugar, add chopped purple cabbage to it.Keep it aside for 30 minutes and then serve.

You can use any can instead of black beans. Rajma / kidney beans, black beans etc.
Variations - Black bean Taco
You can serve this in a taco shell, boat or make a burrito with a tortilla wraps.
Just fill in the taco with brown rice, beans and top it up with grilled corn & pickled red cabbage.

Black beans curry
- 1 small onion
- 1 medium tomato large
- 1 can black beans
- 1 clove garlic
- 2 teaspoon curry powder

Pickled cabbage
- 1 cup purple cabbage
- ½ cup water
- ¼ cup vinegar
- 1 teaspoon salt
- 1 tablespoon sugar

- 5-6 cherry tomatoes
- 1 Avocado sliced
- 1 slice lemon
- 2-3 tablespoon pomegranate seeds optional
- 4-5 taco shells soft/hard - optional
