You can make them as a vegan version, vegetable gyoza or non-vegetarian depending on your diet preferences. They are one of the easiest of vegan recipes. Here is a vegan potstickers recipe which you will love to make time and again.

I loved having veg momos in Gangtok, Sikkim. I love our Himalayas and the fresh air of mountains. Although momos are available in all major cities, Gangtok will always be special. There Is something special when you eat a hot steaming momo in the cold mountain air.I keep travelling to mountains to get back fresh, for the grind of the mundane world. Steamed momos or fried momos just like countless plates of Maggi reminds me of days carefree. They are simple to cook and perfect for bento boxes too.
Ingredients

- Shredded cabbage and ginger
- Shredded spinach
- Gyoza sheets/Dumpling sheet

How to make filling for potstickers?
- Heat oil. Add cabbage and ginger ,cook for few minutes in the skillet over medium heat.
2. Add spinach,spices and mix well. Turn it off once it wilts.
How to make vegan potstickers?

- Remove the gyoza wrappers from packet and keep the filling in a bowl.
- Add filling to individual wrappers, apply little water on the edges
- Carefully close each wrapper folding it at each end.(check these list of videos on Youtube on how to make these )
- Once the ends are closed together, momo will shape up like a half-moon shape below.
- Repeat this for the whole filling. Tip: You can freeze some of the vegetable dumplings in a baking tray after covering them with a cling film.
- Steam them for 10-12 mins. Allow it to cool completely.
- Heat oil in a pan and add the gyoza to it, flip over after few minutes. You can also air fry these veg potstickers.
- Cook until crisp and brown. Serve hot with some chilli sauce.
Air fried momos - Potstickers in air fryer
You can also fry these momos/dumplings in the airfryer.
- Just brush oil on these dumplings ,preheat air fryer at 180C|355F
- Air fry these momos for 5-6 minutes at 180C|355F.

Storage
Make and store steamed gyoza it in refrigerator in advance. Sauté it just before you serve.
Variation
- Dumplings can be vegetarian or meat based depending on the filling. While the filling can be made of cabbage, green onion, carrots and ginger-garlic or with boiled potatoes for vegetarian dumplings. It is meat or chicken for meat lovers. They can be both steamed or pan fried or by deep frying.If you want to avoid deep fried dumplings, you can make air fried dumplings, better known as air fried momos.
Substitution
You can use carrots, purple cabbage and even watercress or silverbeet for dumpling filling if you do not have spinach. Shiitake mushrooms, red peppers, green onions also taste great in these pan fried dumplings.Some people also use a boiled potato filling for their Tibetan style momo.
You can also use homemade dumpling wrappers instead of using store-bought dumpling wrappers from asian market.

Air fried momos
- Just brush oil on these dumplings. Preheat air fryer at 180 deg C|355 deg F.
- Place them in a single layer in the air fryer basket.
- Air fry these momos for 5-6 minutes at 180C|355F.serve warm.

Yes you can freeze them by using wonton wrappers. Just ensure you are careful while cooking it as the water will splash while cooking.
