    Pot stickers are one of the easiest of recipes. You can make them vegan, vegetarian or non-vegetarian depending on your diet preferences. I love making them using gyoza sheets available in the local market. Here is a vegan wonton soup recipe which you will love to make time and again.

    You can eat them steamed or fried as pot stickers or have them in a light broth. This soup has an umami flavor. It reminds you why you will fall in love with Asian soups again. I loved having laksa in Gangtok years ago in the beautiful Indian state of Sikkim. This soup just reminded me of Himalayas all over again. Do you have a special soup memory too?     Ingredients

    The soup requires dumplings, you can either make your own as shown below or use store bought.

    Below are the ingredients used for dumpling.

    • Oil
    • Salt and pepper.
    • Shredded cabbage and ginger

    Remaining ingredients for the wonton soup are given below.

    • Oil
    • Green onion
    • Garlic
    • mushrooms
    • miso paste
    • Soy Sauce
    • Salt,pepper,lemon juice
    • Warm water
    • bean sprouts

    How to make filling for dumplings?

    1. Heat oil. Add cabbage and ginger ,cook for few minutes. Season with salt and pepper. Keep it aside to cool.

    How to make vegan dumplings?

    • Remove the dumpling wrappers from packet and keep the filling in a bowl.
    • Add filling to individual wrappers, apply little water on the edges

    • Carefully close each wrapper folding it to make a semi circle.

    • Wrap the ends together, it will shape up like a dumpling below.

    • Repeat this for the whole filling.

    How to make wonton soup?

    • Heat oil and add green onions and garlic to it.

    • Add sliced mushrooms to the pot.

    • Add 3 cups water with miso paste,soy sauce,soup stock and let it come to a boil.

    • Add the dumplings to the soup and let it boil for 10-12 minutes. Turn off the heat.

    Serve hot with a garnish of green onions and bean sprouts.

    • food processor (for chopping optional)

    Storage

    Make and store raw dumplings it in refrigerator in advance. Frozen wontons can be added once light broth is simmering.

    Variation

    • If you are not a vegetarian or vegan, you may use non-veg fillings or seafood.

    Substitution

    You can use carrots, purple cabbage, spinach and even watercress or silver beet for filling along with cabbage. Use any mushrooms if you do not have portobello mushrooms.

    Dumpling

    • 2 teaspoon oil
    • 1 cup cabbage shredded
    • 1 piece ginger grated
    • salt and pepper as per taste
    • 6-7 dumpling wrappers

    Wonton soup

    • 2 teaspoon oil
    • 1-2 cloves garlic chopped
    • 3-4 stalks green onion or 1 small onion
    • 5-6 brown mushrooms halved
    • 1 tablespoon miso paste
    • 1 tablespoon soy sauce or as per taste
    • 1 teaspoon soup stock powder optional
    • 1 teaspoon lemon juice or as per taste
    • handfull bean sprouts
    • salt and pepper as per taste
    • 3 cups water

    Instructions

    • Heat oil. Add cabbage and ginger ,cook for few minutes.season with salt and pepper. Keep it aside to cool.

    • Carefully close each wrapper folding it at each end making a semi circle
    • Repeat this for the whole filling.

    • Heat oil in a pan and add chopped green onions, garlic and ginger to it.
    • Add sliced mushrooms
    • Add water with miso paste, soy sauce, soup stock and let it come to a boil.
    • Add the dumplings to the soup and let it boil for 10-12 minutes. Turn off the heat.
    • Season with salt,pepper and lemon juice as per taste.
    • Garnish with green onion and bean sprouts. Serve hot.

    FAQ

    Do you freeze your potstickers?

    Yes you can freeze them by using wonton wrappers. If you want to pan fry them for making fried pot stickers, just ensure you are careful while cooking it as the water will splash while cooking.
