Panipuri, puchka or golgappe is perhaps the most exciting thing about chat counter. Be it roadside stalls or wedding menu. Maximum women will be found either at the jewellery store, sale or at the chaat counter.
Guilty as charged! I have loved having it in many cities especially Elco Arcade Mumbai. What is not to love about golgappa. It can be customized according to your taste.Whether you like khatta pani or sour jaljira or extra meethi imli chutney in it. However, the only thing that doesn't change is the fried puri. That has always deterred the health conscious from having it. So here comes the lower calorie air fryer pani puri where we air-fry the pellets and enjoy the same flavors with no worry!
You may also make panipuri in air fryer from scratch. However, that recipe is for another day. Right now, 2022 needs a good start and golgappe or puchkas are perfect for it.
Another recipe close to everyone's heart is the Indian fryums. Fryums have been a part of every kids menu since childhood. Whether you stayed in North or South India, fryums have been a part of farsan or snacks which have been eaten along with main course.
We Sindhis cannot do without our kheecha, vadiya, papad.We need something crunchy and so everyone loves fryums including my toddler. Although, anything in excess is bad, having some at lunch occasionally is fun! Even a boring dal khichdi becomes interesting when you do not have time to cook elaborate meals in a weekday.Fryums as the name says is fried but here we air-fry the fryums to make it little low in calories. Of course, kids do not have to worry about their weight.It is us that cannot run and jump with joy whole day who needs to look at the scale. So lets eat and make merry with a little bit of farsan !

- 8-10 pellets pani puri
- ¼ teaspoon oil optional
For air fryer fryums
- 10-12 pieces fryums
- 1 teaspoon oil
For air fryer rice sev
- 2 piece rice flour sev
- 1 tablespoon oil

How to make pani puri in air-fryer?
- Preheat the air-fryer for 5 mins at 150 deg C | 300 F
- Toss/spray oil on the pani puri pellets. (optional , I tried doing without the oil and they came out well as well)
- Air-fry the puchka pellets for 2-3 mins at 150 deg C| 300 deg F. Ensure there is enough space for puffing up else some might not puff up. Sometimes you will need to check at 2 ½ minutes , cooking till 3 minutes can burn these pani puri.
- Once they puff up, keep them in the air fryer for few minutes and then remove from the basket. If we remove them instantly, I have seen them imploding/cracking out. Once done, you can get to the next batch.
- Serve golgappe with filling of your choice like jaljira and hari and imli chutney.
How to make fryums in air-fryer?
- Preheat the air fryer for 10 mins @200C| 390 F
- Brush oil or oil spray on fryums in a bowl.
- Spread the fryums in the basket. Ensure there is enough space for puffing up else some might not puff up.
- Cook in the air fryer for 2 minutes @200 Deg C| 390 F
- Repeat as per the quantity required. Once the air-fryer batch is done, next batch can be placed immediately.
- Serve immediately or store in an air tight jar for later use.

- I brushed oil on the rice flour sev while preheating the air fryer at 170C | 340FPlaced the rice flour jalebi in the airfryer Cook for 10-12 minutes at 170C |340 F

How to make pani puri in air fryer?
Most important step: Preheat the airfryer for 5 minutes for air fryer pani-puri at 150 deg C.
- Air-fry the pellets for 2-3 mins at 150 deg C | 300F after spraying with oil spray on pellets.
- Once they puff up, keep them in the air fryer for few minutes and then remove from the basket. If we remove them instantly, I have seen them imploding/cracking out.
- Once done, you can get to the next batch.
Once your puchka is puffed up, add jaljira, boondi green chutney, date or tamarind chutney and serve immediately. Follow the instructions on packet to make jaljira.
How to serve pani puri?
Once the pani puri is cooked, you can serve them with
- Boiled potato mix (add spices like salt,chilli powder)
- Chutney (green chutney/tamarind chutney)
- Pani puri water made with pani puri masala (follow the instructions on the packet to make this)
Variations
- Spicy - Make your jaljira extra spicy by adding more jaljira powder.
- Kid friendly - add boiled potatoes to puchka or make it healthy by adding sprouted steamed mung beans. You can also make dahi puri by adding potato, beaten yogurt and chutneys instead of jaljira. Refer to the dahi puri recipe here.

- Preheat the air-fryer for 10 mins.
- Brush oil or oil spray on fryums in a bowl.
- Spread the fryums in the basket. Ensure there is enough space for puffing up else some might end up thin.
- Cook in the air fryer for 2-3 minutes.
- Repeat as per the quantity required. Once the air-fryer batch is done, next batch can be placed immediately.
Serve immediately or store in an air-tight jar for later use.
Storage tips
You can airfry the pellets and keep in an airtight jar at room temperature. I prefer storing them in a glass bottle. Make jaljira pani and chutney fresh and enjoy your panipuri. Fryums can be done 10 mins before you sit for lunch.

Most of the puris come out well but some collapse after taking out and some start popping.

We have seen that happening if we add too many pooris in the air fryer.
For the collapsing poori,try cooking them for a little less time , reduce cooking time by 10-20 seconds.

Air frying wasn’t successful for me. I adjusted temperature and time. Disappointed.

Hi Tami, its unfortunate that it did not work for you.
I would suggest to preheat the air fryer if you did not do it and also do not over crowd the basket.. Other than that, I could not find any reason for which this should not work
