Delicious pot pie and pizza are an easy dinner idea. I love baking them from scratch whenever I get time. Otherwise frozen pot pie and frozen pizzas are a great option. Pies got my attention ever since I saw pie face :). There is a reason I love pot pies. It is a complete meal in itself with a crispy crust and a creamy sauce inside. You can have it on the go too if you have less time. Below recipe is of an air fried vegan pie. It just tastes as great as the market one. You can use different items especially mushrooms, tofu and pumpkins in the filling. Some people dislike these veggies as a whole but are ok when they are in a smaller quantity. Best way you can feed picky kids nutritious veggies underneath that crisp flaky crust. While larger pot pie is great for a gathering, smaller pot pie is also a good idea for bento boxes.

Ingredients
- Olive oil
- Ginger
- onion

Instructions
- Heat oil in a pan and add ginger-garlic to it along with sliced onions. Let it brown.
- Add chopped carrots ,cauliflower and green caps. Stir fry it along with some salt. Cook until the veggies soften.
- Add the spices to the mix
- Add the coconut milk with water (water is optional),also crumble tofu and add that.
- Cover and cook for 10 minutes until the veggies are soft and most of the liquid has evaporated. Allow the veggie mix to cool down for 10-15 minutes
- Transfer the pot pie mix to a baking dish
- Cover the dish with a a shortcut pastry sheet, cut the excess the sheet. Press the edges with a fork.
- Preheat the air fryer at 180 degrees C | 375 degrees F for 5 mins. Place the pot pie dish in the air fryer basket / grill tray. Brush/spray with oil. Cook for 15 minutes at 10C | 355F.
- Once done and you see a golden brown crust, serve warm pot pie.
Variations
You can add any mixed vegetables to it like broccoli, corn, baby corn, carrots and peas for a mixed vegetable stir fry as your tasty pot pie filling.
Substitution
You may use any kinds of mushrooms for this recipe fresh or frozen. You can make a vegetarian pot pie by using paneer instead of tofu. Add left over curry to shortcut pastry sheet and make a quick meal. This will reduce your cooking time. Some people also like to put some egg wash on top of the pies. However, it is fine even without it. Adding egg wash just gives it more crispy finish.
Storage
Store it in refrigerator for 3-4 days or freeze it. Always reheat before you serve your leftovers.
Top tip: Always preheat your air fryer for 5-10 minutes like an oven for best results.

- 1 cup light coconut milk replace 1 cup light coconut milk with ½ cup coconut milk and ½ cup water

Notes
Food safety
