    There is no greater love than a good cup of chai. It definitely brings people together. And with every cuppa comes its perfect companion, the humble sev. This namkeen comes in various shapes and sizes. Whether its nylon or thick ribbon. Aloo bhujiya, ribbon or murukku. Sev is a gift for every tea lover. The only catch with namkeen is the oil it drinks while frying. Thus making all of us wary of binge eating it.

    Here is a recipe very close to my heart. Air fryer sev which did take its sweet time to come to perfection. However, it was worth the efforts and wait. Learn to make this air fryer sev to make the best sev ever! I bet you will never buy a fried namkeen from outside once you start making it.

    I have made brown rice chakli in the past but somehow the sev recipe needed its time to get to perfection. After several tweaks and experiments , the results are mind-blowing.

    Ingredients

    • besan or chickpea flour
    • red lentil flour
    • rice flour
    • turmeric powder
    • pinch soda
    • water
    • oil
    • salt as per taste

    Instructions

    1. Add chickpea flour, red lentil flour, rice flour, salt and baking soda in a bowl.

    2. Mix water with oil.Blend the liquid with little turmeric

    Hint: Always preheat your air fryer. Remove any tidbits that remain from the earlier cook.

    3. Add water mixture to flour along with some turmeric powder. Add little water mixture first and then add more if required to get a semi hard dough.

    4. Knead into a semi hard dough. Cover and leave aside for 15 minutes.

    5. Boil water in bowl. Transfer the dough to a sev maker/snack compress. Press to get thin sev in the boiling water.

    6. Cook for 5-7 minutes. Take the sev out of water.

    7. Transfer to a bowl of cold water, let it cool down for 15 minutes.

    8. Take the sev out of water and place it over a tissue.

    9. Toss some oil and transfer the sev to a preheated air fryer basket. Cook at 180C/355F.

    10. Cook for 5-7 minutes. Spray oil and cook further for 4-5 minutes or until its cooked and crispy.(total cook time of 10-12 minutes)

    11. Take the cooked sev out. Store in an air tight container when cool.

    Substitutions

    Experiment with different flours to make variety sev. The cook time and texture will change according the ingredients used.

    Variation

    You can make different variety of sev once you have the basic recipe set. Add lemon juice, to make your nimbu sev. You can also add red chili powder to make teekha sev.

    Storage

    Store sev in an air tight container once it cools completely.

    Top tip

    Always preheat your air fryer like your oven. Never overcrowd the basket else it will result in uneven cooking.

    Ingredients

    • ¾ cup chickpea flour besan
    • ¼ cup rice flour
    • 1-½ cup red lentil flour masoor dal flour
    • pinch baking soda
    • ⅛ teaspoon turmeric powder
    • salt as per taste

    • 2 tbsp. oil

    Notes

    The dough needs to be semi hard, not to hard (else you will not be able to use the sev press) and not too soft.
    I have tried using just besan with rice flour, however the sev was more soft when I cooked them in boiling water and hence they cooked in clumps compared to using the red lentil flour.
    I believe if you just want to use besan, then use more rice flour, example, for every 1 cup of besan use ¼ cup rice flour. I have not tried this combination but I believe this will help give a better texture.

    Food safety

    • Cook to a minimum temperature of 165 °F (74 °C)
    • Do not use the same utensils on cooked food, that previously touched raw meat
    • Wash hands after touching raw meat
    • Don't leave food sitting out at room temperature for extended periods
    • Never leave cooking food unattended
    • Use oils with high smoking point to avoid harmful compounds
    • Always have good ventilation when using a gas stove
