Asparagus is a spearhead of nutrients. It is easily available when in season and relatively cooks fast too. You can grill it or roast it with veggies. Another good way of having it is making air fryer asparagus or make a wonderful asparagus soup. It is comforting and just perfect for a cold winter night.

Top tips: If you are not familiar with asparagus (or shatavari), there are definitely some questions you get when you first buy it. It took me a while to understand and find how to select a good bunch of asparagus. Here are some tips which will help you choose a good bunch.
Is thick or thin asparagus better?
When you look at it in the market, you will find it in bunches. Air frying asparagus with thicker stems is better as they are more fleshy. You must apply oil on the spear head too so that it does not dry due to high temperature. It should be rich green in color and it fades towards the stem. Tips might look green or have purple shade to it. Thin asparagus dries very fast in an air fryer as it does not have that much flesh.
Which part of asparagus is edible?
Except for woody stem, you can eat it whole.
Is purple asparagus better than green?
Purple is sweeter and used raw, usually in salads.
Do you wash asparagus before roasting?
Wash and rinse before you use. However, wash only when you are ready to use immediately.

How to make asparagus soup recipe?
We have used an air fryer to cook the asparagus ,onion and garlic in batches. If you do this in an oven you can put all of them in a tray and do it one shot. Asparagus takes less time to cook than onions, however you can cook them in a single batch in the oven.
- Choose asparagus that is fresh and has thick stems and tips. The thinner asparagus will take less time to cook. Trim the hard brown stem at the bottom of asparagus. Wash it well.
- Drizzle oil on the stems along with some sea salt.
- Preheat the air fryer at 170 C|340 F for 10 minutes. Air fry the asparagus for 7-8 mins in the airfryer or 10-12 minutes in the oven.
- Keep it aside.
- place the sliced onions and garlic cloves. Brush oil on them and air fry in a preheated air fryer for 12-14 mins at 170 C |340 F or 16-18 minutes in an oven.
- Add all ingredients to a blender with 3 cups water
- Blend the above veggies along with soup stock in Vitamix or any high speed blender.
- Warm up the soup before serving. You may optionally garnish with black pepper with lemon juice.
Substitutions
If you are vegetarian, you may use butter for cooking asparagus, instead of olive oil. You can also garnish soup with grated cheese or nutritional yeast if vegan on top. You can also make the above recipe as a purple asparagus recipe.
Storage
Store it in refrigerator for 1-2 days. Air fry for couple of mins before you serve. It is always best to eat fresh.
