How to make achari paneer?
- Grind the spices to a powder and keep aside.
- Heat oil in a pan,Add ginger,chillies and finely chopped onion with salt,cook until brown
- Now add tomatoes puree and let it soften.
- Add spices and cook for few minutes
- Pour in the yogurt mix until cook the oil oozes out.
- Add the pickle oil,water and let it come to a boil.
- Add the paneer pieces to it and cook for 10 mins.
- Serve hot with roti/jeera rice.
Substitution
Halloumi and feta to work as a replacement if you don't get time to make yours or do not have it in the nearby store. Vegans can use firm and extra firm tofu to make the same recipe
Variation
Another great way of using the left-over pickle masala is achari mathri. This is a vegan starter which appeases everyone at tea-time.

- ½ cup plain yogurt/dahi
- 2 tablespoon chickpea flour/besan

- 1 teaspoon nigella seeds/kalonji
- ½ teaspoon fenugreek seeds/methi dana
- 1 tablespoon red chilli powder
- 1 teaspoon turmeric/haldi

- 2 -3 tablespoon oil
- 2-3 achar ka tel/oil from any pickle
