It is quick wholesome and healthy. You can pair it with a bowl of fresh salad for a quick meal. A crusty bread or sourdough tastes great with it. Italian pasta or just have it with some grilled cheese sandwich. Garnish with red pepper flakes for a spicy twist.

- green apple halved and de-seeded
- onion diced optional

- Chop fresh ingredients that include onion, tomato, carrot and apple.
2. Heat oil in a large saucepan and cook onions.
3. Add tomatoes, cook until soft.
4. Add rest of the veggies.
5. Add water and let it boil.
6. Once the veggies are soft, add soup stock.
7. Blend the soup using a stick blender.
8. Sieve the pureed soup through a strainer.
- Let it come to a boil. Serve hot.
Garnish: You can also garnish it with a leaf of fresh basil if you have it handy. Non vegans can also add a dollop of sour cream on top.
You can add vegetable stock to make it richer in nutrition. Other vegetables like long melon, bell pepper can be added too. They blend well. However, you will need to strain it. Non vegetarians can also use chicken stock. You can also use canned tomatoes for the recipe instead of whole tomatoes.Fried garlic cloves can be added to large pot of soup.
You can also make grilled tomato soup. You can also make a vegetarian soup by adding some roasted vegetables or quinoa to it. If you like chunky textures, you can add chopped pieces of air fried toast to it. If you like a creamy texture, add a can of full-fat coconut milk to a large batch of soup.
You can store the leftover soup in an airtight container.
Tomato carrot apple soup | carrot tomato soup recipe
- 1 tablespoon vegan butter/butter/coconut oil
- 1 green apple halved and de-seeded
- 1 medium onion diced optional
- 1 carrots halved
- 4 medium tomatoes halved
- 1 tablespoon stock powder I use vegeta/massel.You may use any brand you maylike
- 3 cups water
- Salt and pepper as per taste
- In a pressure cooker/ instant pot ,heat oil and add onions to it. Saute for 2 minutes.
- Add the chopped tomatoes with salt, mix well and let it cook until soft
- Add carrots and apples, followed by water.
- Cook until the vegetables are cooked/soft,add soup stock and more water if required.
- Once it cools, Blend and strain the soup.
- Season with black pepper or red chili flakes. Serve hot.
