    Best carrot tomato soup is the one which is made with minimal ingredients. There are many tomato soup recipes, like cream of tomato, vegan tomato soup. This soup is a very popular one. Nothing better than an easy homemade tomato soup when you are down and out. It is flavorful, cooks fast and it has my secret ingredient. I call it 1-2-3 tomato soup. Why? Because it needs the ingredients in just that quantity to make it.

    You can add other ingredients optionally but even with basic 3 ingredients. However, some salt n pepper it would taste just as yummy. This is a great recipe for detox or just when you want your kitchen budget in control. Especially now with budgets reaching the sky due to inflation or due to the pandemic. Other vegan soups include Adzuki bean soup , pumpkin soup, white bean soup , Asparagus soup , broccoli soup ,manchow soup ,corn soup , minestrone soup , spinach soup.

    How to make easy carrot tomato soup? (Video recipe)

    Equipment

    • saucepan / dutch oven
    • immersion blender / high-speed blender
    • sieve

    Ingredients

    • coconut oil / olive oil
    • green apple halved and de-seeded
    • onion diced optional
    • carrot
    • tomatoes
    • stock powder
    • water
    • Salt and pepper as per taste

    Instructions

    There are 2 ways to make this soup. The steps here show, how to make it without a pressure cooker. To see how to make it in the pressure cooker, follow the steps in the recipe card.

    1. Chop fresh ingredients that include onion, tomato, carrot and apple.

    2.  Heat oil in a large saucepan and cook onions.

    3. Add tomatoes, cook until soft.

    4. Add rest of the veggies.

    5. Add water and let it boil.

    6. Once the veggies are soft, add soup stock.

    7. Blend the soup using a stick blender.

    8. Sieve the pureed soup through a strainer.

    • Let it come to a boil. Serve hot.

    Garnish: You can also garnish it with a leaf of fresh basil if you have it handy. Non vegans can also add a dollop of sour cream on top.

    Substitution & Variations

    You can add vegetable stock to make it richer in nutrition. Other vegetables like long melon, bell pepper can be added too. They blend well. However, you will need to strain it. Non vegetarians can also use chicken stock. You can also use canned tomatoes for the recipe instead of whole tomatoes. Fried garlic cloves can be added to large pot of soup.

    You can also make grilled tomato soup. You can also make a vegetarian soup by adding some roasted vegetables or quinoa to it. If you like chunky textures, you can add chopped pieces of air fried toast to it. If you like a creamy texture, add a can of full-fat coconut milk to a large batch of soup.

    Storage

    You can store the leftover soup in an airtight container.

    Ingredients

    • 1 tablespoon vegan butter/butter/coconut oil
    • 1 green apple halved and de-seeded
    • 1 medium onion diced optional
    • 1 carrots halved
    • 4 medium tomatoes halved
    • 1 tablespoon stock powder I use vegeta/massel.You may use any brand you maylike
    • 3 cups water
    • Salt and pepper as per taste

    Instructions

    • In a saucepan,heat oil and add onions to it. Saute for 2 minutes.
    • Add the chopped tomatoes with salt, mix well and let it cook until soft
    • Add carrots and apples, followed by water.
    • Cook until the vegetables are cooked/soft,add soup stock and more water if required.
    • Once it cools, Blend and strain the soup.
    • Season with black pepper or red chili flakes. Serve hot.

    To make in pressure cooker.

    • Follow the same steps in pressure cooker. Once you add water. Pressure cook for 2 whistles. Blend or mash with a masher and then strain.

        Thanks for your query.
        You can use 1 full can of tomatoes. However, try to use the natural no preservative ones. Canned tomatoes are already tart so you may avoid apple in this case.
