    Gujarati farsan dishes are most loved dishes.I like to make Dhokla or fafda and recently started to make Gujarati patra at home.

    Gujarati Patra is a delicacy which brings a smile to your face always. It is also called as aloo vadi in Maharashtra. Call it by whichever name, this tender taro leaf delicacy is fried to perfection after being smeared with a batter of chickpea flour and spices is crisp and green to every food lovers delight. However, the eternal battle of waist and mind, is it healthy? Can I make it low oil?

    This battle is won, when you make it to perfection in an air fryer instead of frying it.

    Yes, air fried patra is a dish you will fall in love time and again once you make it. It is one of my favorite appetizers after pakoras and samosas. I love making it in my air fryer! Learn to make the perfect air fried patra here.

    Ingredients

    taro or colocasia leaves
    • colocasia leaves / taro leaves
    • chickpea flour (besan)
    • quinoa + oats flour (or more chickpea flour)
    • ginger paste
    • tamarind pulp
    • turmeric powder
    • heeng / asafoetida (avoid if gluten-free)
    • red chili powder
    • garam masala
    • green chilli
    • asafoetida
    • salt as per taste
    • water
    • oil
    • sesame seeds
    • fresh grated coconut

    Instructions

    In a mixing bowl add green chili, turmeric powder, red chili powder, salt, asafoetida, chickpea flour, quinoa flour,oats flour,cumin powder and little water

    Mix well with water to make a paste.

    Spread the paste using a spoon on the taro leaves so that the mixture is spread evenly.

    Add another leaf on top,spread the mixture again. Do this with atleast 4-5 leaves.

    Close it from both ends and roll it up.

    Repeat this for another set of leaves,put these rolls in a steamer

    Steam it for 20-22 minutes, Remove it from steamer and keep it aside.

    Once it cools down,cut it into small spirals like a Swiss roll.

    Brush them with oil and sprinkle sesame seeds on them, air fry them in a preheated air fryer at 180C|355 F for 8-10 minutes.

    Serve warm with a dip/chutney

    Substitutions

    You can use jowar flour instead of chickpea flour.

    Variations

    Patra can also be used to make patra biryani where it is added while making dum biryani. Other ways of eating it,is by adding it to a ridge gourd curry also known as turiya patra. Other variations are ek top ni patra and vagharela patra.

    Storage

    Store the patra wheels in a tray and cover it with a cling film, freeze it for later. Air fry whenever you are ready to eat.

    Equipment

    • Air fryer
    • steamer
    • Mixing bowl

    Ingredients

    • 1 cup chickpea flour Besan
    • ½ cup oats flour or chickpea flour (Besan)
    • ½ cup quinoa flour or chickpea flour (Besan)
    • ½ teaspoon Red Chili Powder
    • ½ teaspoon turmeric powder
    • ½ teaspoon cumin powder
    • ½ teaspoon green chilli or as per taste
    • ¼ teaspoon asafoetida /heeng avoid if gluten-free
    • 3 tablespoon tamarind paste
    • water enough to make thick paste
    • 1 tablespoon oil
    • salt as per taste
    • 8-10 Colocasia leaves arbi leaves

    For tempering

    • 1 teaspoon sesame seeds
    • 1 tablespoon oil
    • salt as per taste
    • freshly grated coconut for garnish

    Instructions

    • In a mixing bowl add green chili, turmeric powder, red chili powder, salt, asafoetida, chickpea flour, quinoa flour,oats flour,cumin powder and tamarind paste with enough water to make a thick paste
    • Mix well with water to make a paste.
    • Wash the leaves first & spread the paste using a spoon on the taro leaves so that the mixture is spread evenly
    • Add another leaf on top,spread the mixture again. Do this with atleast 4-5 leaves.
    • Close it from both ends and roll it up.
    • repeat this for another set of leaves,put these rolls in a steamer.
    • Steam it for 20-22 minutes, Remove it from steamer and keep it aside to cool.

    Notes

    You may adjust the spices as per your liking. Increase the chillies or tamarind pulp as per your taste.

    FAQ

    Are Colocasia leaves edible?

    Taro or colocasia leaves are edible ONLY when cooked first.

    Why taro leaves Cannot absorb water?

    they are hydrophobic and cannot absorb water, hence self cleaning.

    Food safety

    • Don't leave food sitting out at room temperature for extended periods
    • Never leave cooking food unattended
    • Use oils with high smoking point to avoid harmful compounds
    • Always have good ventilation when using a gas stove
